Boloñesa, otro clásico. Bolognaise, another classic.

Como supongo que habréis notado, soy una fanática de la pasta. Por norma general, no me entusiasma la pasta con salsas que lleven tomate y/o carne, pero la boloñesa casera es una de las excepciones. Con lo cual, la entrada de hoy va dedicada a ella.


Ingredientes:

- salsa de tomate (ir a la receta)
- carne picada (el peso dependerá de la cantidad de pasta que tengamos, yo esta vez le 
  puse unos 300g) pasada dos veces
- 1 diente de ajo
- 1 cebolla grande
- aceite de oliva
- sal


Cortamos el diente de ajo a láminas. Lo echamos a la sartén con 1/2 dedo de aceite aproximadamente. 


Cuando el ajo esté doradito, lo sacamos del aceite con la ayuda de una cuchara y echamos la carne con la sal ya añadida.


Removemos a la vez que trituramos bien la carne para que se separe, durante aproximadamente 10 minutos (hasta que empiece a salirle una costrita marrón). 
Echamos la cebolla, cortada muy fina.


Una vez hecha la cebolla, echamos poco a poco la salsa de tomate, mientras la removemos bien.

Bajamos el fuego al mínimo y dejamos cocinar unos 5 minutos, removiendo de vez en cuando. Pasado este tiempo, añadimos la pasta (yo he usado farfalle), nos aseguramos de que se mezcle bien con la salsa, y cocinamos otros 5 minutos.

I suppose that now you can see that I'm a pasta addict. Usually I don't like it with sauces that have tomato and/or meat, but the homemade bolognaise is an exception. That's why I dedicated today's entry to it.


Ingredients:

- tomato sauce (go to the recipe)
- ground beef (I used 10oz)
- 1 clove of garlic
- 1 big onion
- olive oil
- salt


We cut the garlic in strips. Add olive oil to a pan (1/2 finger's length) and cook the garlic until golden.


When the garlic is done, we remove it from the oil with a spoon and we add the meat, previously salted.

Stir and mash at the same time, cooking it for 10 minutes or until it starts getting a brown color. Then we add the onion, cut very thin. 


Once the onion is done, we slowly add the tomato sauce, stirring at the same time.
Cook it for 5 minutes, low heat, stirring frequently. Then we add the pasta (I used bowties or farfalle), making sure it mixes well with the sauce, then we cook it for another 5 minutes.

Receta: Salsa de cherrys y albahaca. Recipe: Cherry tomatoes and basil sauce.

Esta es, junto con la carbonara (próximamente...), una de mis salsas favoritas. Es muy fácil de hacer, es muy ligera y muy económica. Suelo ponérsela a los spaghetti/linguini/fetuccini, pero esta vez he usado rotini porque ya los tenía hechos. Es una buena opción ya que requiere ingredientes que se suelen tener en la cocina.


Ingredientes (para 2 personas):

- 1 cajita de tomates cherry
- 1 diente de ajo
- 5-10 hojas de albahaca fresca
- aceite
- sal
- 1 cucharada de postre de azúcar (yo he usado azúcar moreno)
- Opcional: una cucharada sopera de caldo de pollo o del mismo agua con el que hemos
  hecho la pasta.


Ponemos un poco de aceite en una sartén y echamos el diente de ajo, cortado en láminas. Lo doramos a fuego bajo.


Echamos los cherrys enteros ya lavados, añadimos sal al gusto y dejamos rehogar tapados unos 5 minutos, removiendo de vez en cuando.


Añadimos el azúcar, volvemos a tapar y dejamos hacer otros 3 minutos.


En este punto es cuando podemos añadir la cucharada sopera de caldo de pollo o del mismo agua con la que hemos hecho la pasta. Queda más sabrosa, pero se puede hacer sin. Echamos las hojitas de albahaca y dejamos tapado otros 3 minutos.


Ahora añadimos la pasta ya hecha, y la dejamos hacer durante 5 minutos sin taparla. Vamos removiendo de vez en cuando, asegurándonos que quede bien mezclada con la salsa.

This is, with the carbonara (coming soon...) one of my favorite pasta sauces. Is very easy to do, light and cheap. I usually combine it with spaghetti/linguini/fetuccini, but for this recipe I used rotini because I had it already done. 
This sauce is a very good emergency option, because it needs ingredients that everybody has in the kitchen.


Ingredients for 2:

- 1 box of cherry tomatoes
- 1 clove of garlic
- 5-10 leaves of fresh basil
- olive oil
- salt
- 1 tea spoon of sugar (I used brown sugar)
- Optional: 1 table spoon of chicken broth or the boiled water of the pasta.


Add a bit of olive oil to a pan. Cut the garlic in strips and cook it (low heat) until it starts getting a golden color.



Add the cherry tomatoes, already washed, salt and cook covered for 5 minutes, stirring frequently.


Add the sugar, cover and cook for another 3 minutes.


At this point we can add the table spoon of chicken broth or water. The sauce will come out tastier, but you can also do it without it. We add the basil leaves, we cover it again and we cook it for 3 more minutes.


Now we add the pasta (already cooked) and we cook it uncovered for 5 minutes, stirring frequently and making sure everything is mixed.

Receta: salsa de tomate natural. Recipe: homemade tomato sauce.

Vuelta a los básicos. Parece una receta muy obvia, pero lo cierto es que me cuesta encontrar una salsa de tomate natural que me guste (que sepa a la de mi madre, vaya!). Es cuestión de saber el punto de todo, pero tal y como la hago yo me gusta bastante. Ahí va!


Ingredientes

- 1 diente de ajo
- 1 cebolla grande
- 1kg de tomate pera (aunque yo he usado tomate de ensalada, del pera se consiguen 
  mejores resultados)
- azúcar moreno
- sal 
- aceite de oliva



Como hay que pelar los tomates, un truquito que va de maravilla es ponerlos a hervir en agua durante 30 segundos y escurrirlos en agua muy fría. Así la piel se suelta mucho más fácilmente. Los pelamos y troceamos. 


Cortar el ajo a láminas y la cebolla a juliana. En una cazuela ponemos aproximadamente un dedo de aceite. Echamos los ajos y cuando se empiecen a dorar, echamos la cebolla.


Cuando la cebolla empiece a transparentar, echamos los tomates, sal y azúcar al gusto y removemos bien. Para que los tomates se deshagan bien, removemos a la vez que vamos troceando con la cuchara de madera.



Lo dejamos haciendo unos 20 minutos, removiendo a menudo. Et voilà! Durante un tiempo la pasaba por la batidora, pero ahora la verdad es que la dejo tal cual porque me gustan los trocitos de tomate, eso ya va al gusto de cada cual. También le añado unas hojitas de albahaca fresca a la hora de mezclarla con la pasta.

Back to basics. I know you must think it's a very simple recipe, but truth is that I rarely find a tomato sauce made like my mother's. Is a matter of finding the measure of all the ingredients, but I like it the way I do it. Here it goes! 


Ingredients

- 1 clove of garlic
- 1 big onion
- 2.2lbs of Rome tomato (for this recipe I used salad tomato, but with the Rome you will 
  get better results)
- brown sugar 
- salt 
- olive oil



One trick to peel the tomatoes is to boil them for 30 seconds, strain and then pour cold water. This way, the skin losens up easily. We peel them and chop them up. 


Chop the garlic and cut the onion in strips. Add a finger's length of olive oil to a pot, when it's warm add the garlic. When the garlic starts getting a golden color we add the onion. 



When the onion starts becoming transparent, we add the tomatoes, salt and sugar and we stir well. The tomato pieces are still fairly big so we must smash them with the help of the wooden spoon and at the same time we keep stirring. 




Let it cook for 20 minutes, stirring regularly. Et voilà! I used to blend it, but now I don't because I like the pieces of tomato in the sauce, it really depends on you. I also add some fresh leaves of basil when I add it to my pasta.
